Milk kefir recipes and ideas, from breakfast to pudding
In short
Homemade milk kefir is lovely on its own, but its creamy, tangy character makes it just as useful in the kitchen. It goes on porridge and into overnight oats and smoothies at breakfast, into marinades, dressings, dips and chilled soups for savoury dishes, and into soda bread, scones, pancakes, fools and cheesecakes for bakes and puddings. Detailed quantities are in the guide and the exclusive recipes sent with your Natural Probio grains.
Once a jug of kefir is always waiting in the fridge, you start to see it everywhere: in the recipe that asks for buttermilk, in the dressing that needs a bit of tang, in the smoothie that needs body. Here is a tour of the ways our customers use theirs, sorted by moment of the day. Each section leads to a page with more ideas.
First, on its own
A glass of cold kefir, straight from the fridge, is how most people start. Plain, it is fresh and tangy with a creamy feel. A drizzle of honey, a pinch of cinnamon or a spoonful of fruit purée turns it into something closer to a pudding in a glass. Some like it shaken with ice on a warm afternoon, others warm their hands around a mug of tea and enjoy a small glass of kefir alongside.
At breakfast
Porridge with kefir
A swirl of cold kefir over hot porridge, with berries or stewed apple.
Overnight oats

Smoothies
Banana and peanut butter, frozen berries, mango: kefir gives them body and tang.

In bakes and puddings
Scones

Soda bread
Kefir does the job buttermilk usually does in this quick, no-knead loaf.
Fools and cheesecakes
Rhubarb or gooseberry fool, a lighter cheesecake, an Eton mess with a tang.
Pancakes, banana bread, lemon drizzle and more: kefir bakes and puddings.
Why kefir works so well in the kitchen
Kefir is pourable, creamy and gently acidic. That makes it a natural stand-in for buttermilk, which many recipes ask for and few of us keep in the fridge. In baking, its tang reacts with bicarbonate of soda to help scones and soda bread rise. In marinades, it clings to meat and carries spices. In dressings and dips, it brings freshness without heaviness. And because you make it every day, it is always there when a recipe calls for it.
| Moment | Ideas | Kefir replaces |
|---|---|---|
| Breakfast | Porridge, overnight oats, smoothies | Milk or yoghurt |
| Lunch and dinner | Marinades, dips, dressings, chilled soups | Yoghurt, soured cream, mayonnaise in part |
| Bakes and puddings | Scones, soda bread, pancakes, fools | Buttermilk, milk, cream in part |

Questions about cooking with kefir
Can I use homemade kefir in any recipe that calls for buttermilk?
In most of them, yes: scones, soda bread, pancakes and many cakes. Your recipe library includes versions written for kefir.
Can I heat kefir?
You can bake and cook with it like any dairy ingredient. Many people prefer to enjoy it cold as a drink, and use it in cooking when a recipe calls for it.
How much kefir do I need for cooking as well as drinking?
If you plan to cook with kefir regularly, the 20 g pouch, for about a litre a day, gives you enough for both.
